Vanilla Yogurt & Strawberry Popsicles
I'm going to cut to the chase. It is about 1,000 degrees outside and I'm not happy. Ok...1,000 degrees...100 degrees...it's basically the same. At this point, the usual summer high points like farmers markets, fresh fruit, and the fact that it stays light outside longer mean nothing to me. My only desire is to stay cool. Even my air conditioner is feeling the heat because it is 85 degrees in my room at the moment. Not exactly chilly. However, I'm thankful to have air conditioning at all! I'm also thankful for easy to make, icy treats like these popsicles. I found this recipe earlier this week and decided to give it a try. Due to the heat, both my physical and mental health were demanding a cold treat. These pops certainly did the trick!
Vanilla Yogurt & Strawberry Popsicles adapted from Bakers Royale
- 1 1/2 cups pureed strawberries
- 2 cups vanilla yogurt
I eliminated the crushed vanilla oreos from the recipe and it was still extremely tasty!
- Puree the strawberries. Add a layer of vanilla yogurt to your popsicle mold. Freeze for 30 minutes. Add a layer of strawberry puree. Freeze for 30 minutes. Add the last layer of yogurt and insert your popsicle sticks. Freeze.
Mmm. I love popsicles! I can think of so many fun combinations to try with this popsicle mold. My dad just texted me that he is bringing some fresh peaches home...peach pops next maybe? :)
